Healthy and surprisingly delicious!

Ingredients:

Wet mixture
100 grams Spinach (fresh)
1 tsp Vanilla
2 Eggs
1/4 cup Oil (neutral oil such as cold pressed rapeseed oil)
1/2 cup Apple sauce

 

Dry mixture
2 cups Plain Flour
3/4 cup Sugar
2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp of Salt
 

Instructions:

  1. Preheat oven to 180o C or 160o C for fan assisted oven. Spray oil on muffin pan or use a greased proof muffin holder.
  2. Puree spinach by adding to it into the blender along with vanilla, eggs, oil and apple sauce. Blend until mixed together.
  3. In a large bowl, combine all the dry ingredients - flour,sugar, baking powder, baking soda and salt.
  4. Mix the wet and dry mixture together. Pour into the muffin tin. Each muffin should be 2/3 full.
  5. Bake for 20 minutes. Check by inserting a toothpick in the middle. If it comes out clean then its ready. Enjoy!
