Soft and Moist!

Ingredients:

3 Large or 5 Small Bananas, ripe (mashed)
1/2 cup Almond Flour
1 cup GF Self-raising flour
1 cup GF Old fashion Oats
1 tsp GF Baking powder
1 tsp Cinnamon ground
2 Eggs
1 cup Demerara Sugar or Brown
100 g Butter (melted) or 80ml Oil (Nuetral oil such as Rapeseed)

 

Method:

  1. Preheat oven to 180C/ 160C fan assisted oven and grease the bread tin/ mould with butter or oil.
  2. Mix all dry ingredients except the sugar
  3. Mix the melted butter, sugar and eggs in a separate bowl.
  4. Mix the dry and wet ingredients.
  5. Pour on to a greased bread tin or with baking paper.
  6. Bake for 45 minutes and use a toothpick to test if its ready.
  7. Let it cool down before cutting. Enjoy!
